1968 red interior. I need to touch up my center tunnel section in red. What is a better color match? The corvette parts supplier red or the SEM Portola red? Corvette Central has a 65-72 red.

SEM is just rebranded at Vette venders. Same stuff.

I've replaced the black interior of my 70 with red. Most of the red parts are repro. Some have been "re-dyed." I just order "red" or "red" dye for a 70 and the colors come out correct. I'm not familiar with Portola Red. Don't know what that red color is. The 1970 red and I assume 1968 also, is fire engine red.

Looks like you don't talk of repainting interior parts, but talk of re-dying them. The interior paints are very thin. It takes many coats to make a transformation from, in my case, black to red. Since you're doing touch up, a few coats should do'er.
