It all depends on the RPM range you plan. The front part of the pan that causes most windage issues on a 4.25 stroke. It's just real close and oil can't get away.
I run a Milodon 31188 Drag race stepped pan and it's fantastic. One of the best wet sump pans and it will fit in a Vette. It has a kickout along the right side to allow oil to escape and a deeper front section. And the best thing to me is the sump actually 'steps in" vs kick out like most. So whatever oil gets back to the pan will be higher over the pickup. I compared it against my previous Moroso pan (that was fine on my 427 but terrible on the 540/555) and found the same amount of oil was about 5/8" higher over the pickup which doesn't sound like much..but is a lot when you're only dealing with a couple of inches or so of oil.
I'd try it with the 6 qts and verify it hold oil pressure at your RPM range. Too much will kill power and foam the oil on a pan like yours. It might even like a half QT less.
I run a long truck style oil filter also to carry a little extra oil capacity for cooling but keep it out of the sump.
Before I install unknown pans like this I put them on a bench and fill them full of oil to see how much it takes before the level goes above the "bathtub" or the sump baffle.......you want the level below this. And although a company may claim that it is a "7 quart" or "8 quart" pan......I have seen that not to be the case many times over the years......
If the oil level is above the baffling......this is bad.....
I think I would call Champ short of removing the pan......
