I got my new heads and noticed they don’t have the center opening like my factory heads which I was wondering if it matters. The gaskets have the opening and for now am using oem intake which has the opening. I do know it is the heat crossover but was wondering if it matters except the choke is probably affected.Thanks

Most of us block off that port in a performance application anyway.
Thanks that’s good to know. Most importantly I need to know is,will it matter if I just put the gasket on put sealant around water ports and button it up.
You can use the OEM gaskets, but FelPro makes a better one w/o the hot air cross-over opening.
Edelbrock also has a gasket sealer (Gastiniche) just for that job. Apply it on both sides of gasket.
RTV clear around the water ports.

Not having the crossover is a good thing for performance and not heating up the intake charge prior to entering the cylinders. Crossover heat was for winter operation, unfortunately if it's there you can't select when it's on or off, it's on all the time creating it's own set of problems in the summer months. If those heads don't have the crossover then it's a good thing. Like you said it may render your choke inoperative and you'll have to switch to an electric choke, or eliminate it all together, your choice.
You don't need three products to seal one gasket. Pick one and use it. I've always used permatex ultra black and never had a leak of any sort. Of course thread sealant is needed as well for the bolts. The right stuff is like ultra black in a pressurized cheese product can. Just a different package really.

i'm running the Edelbrock #60899 Performer RPM heads with no crossover ports and the 2101 manifold on my '72 350,
have the stock choke fitted and it works fine, albeit probably a bit slower to open.
Lar's rebuilt the carb so all good there, it took a lot of trial and error fiddling with the choke rod length that's connected to thermo spring to get it where it is now,
to start i just crank for about 5sec to build oil press, then press the throttle to the floor to set the choke, then it usually fires right up on high idle cam,
after about 1 min, i blip it and it drops down and idles smooth as.
where i live downunder it's warm(ish) weather, very very rare below 50*F, and none of that white powder stuff on the ground, ever..... probably helps.
I've had the E-Street heads on my L48 for about 5 years now, with the stock divorced choke set up, and everything is all good. As riverracer au stated in his post, it takes a smidge longer for the choke to fully open.
