Radiator seal position
I seems to be putting a lot of pressure on the hood and causing the front lip of the hood to stand proud of the surround.
(I know I’m missing a piece between rad and rad support, need to get that one.)

The one-piece seal is correct, at least for my car, and is self-adhesive -- meaning that, unfortunately, there are no locating pins to use. It's such a long piece of foam with ears, it's difficult to know where it's supposed to lie.
Does your engine run hot, requiring more air forced through the radiator? Or for originality, etc.?
According to Doc rebuild site, ‘71 350 with A/C would have the one piece.

You have a cold air intake on your 78.
However, there is a seal that fits under your plastic cold air intake extension.
"IF" you have both L&R #4 seals in this drawing you can purchase #2 seal separately, GM original #379975 was superseded to #14016160
The 14016160 seal is a cut to length seal . It is 19" L X 1" H X 7/8" W
"IF" you are missing both L&R #4 seals there are NOS assemblies online that include both #2 & #4 seals as 1 complete assembly.
That assembly part number is GM #331871 parts catalog say fits 1972-1981

Note: It can get real confusing on what seals to order depending on your cars options, but the vertical side and top seals fit all options.
Now I have added a foam hood liner so the original space to the hood was smaller now and the seal foam was quite stiff
I found it was pressing too hard on the hood, so I shaved the top of it (hot wire) a bit better than 1/8" along where it was pressing the hardest into the soft hood liner. There's a complete seal across but it doesn't press more than the indent on the foam hood liner any more
