You don't calculate it. You determine it from dyno testing and from the cylinder head manufacturers' data. If you have stock iron heads, that number is 36 degrees for most small block applications, and can be up to 38 on the large bore applications. If you have aftermarket heads with good chambers, that number is 32.
If you're running boost, you have to do actual dyno testing to determine the curve and the number.
