I bought a Quadrajet 17080228 (Corvette 1980), which is missing the fast idle assembly. It came with the fast idle cam follower, part number 41497. What is the part number for the correct fast idle screw assembly? I found the following options: 30677, 35806, 35998, and 498.
They’re the Rochester part numbers stamped on the actual parts. I can check my own 1980 later today, but from my research online 498 seems to be the only part number for an M4M carb (post 1975.)

Those are casting numbers, not part numbers. Rochester or otherwise.
For 78 and newer year models using the Parts & Illustration Catalog you need to go to the end of Gr.3.00
In OP case, the part number for the Fast Idle Adjust Screw is the same for ALL 1980 Carbs.
Normally you would need to record the carb number and then follow the column number 1-5 for the correct GM part number...
