I use to have that same problem before sending the carb to Lars for a rebuild. Carb works great now. When it was happening before the rebuild, it was due to the choke cam sticking and causing the fast idle. Some carb cleaner and WD 40 fixed it til it was rebuilt.

That picture was taken when I got all the carbs tuned just right and hit the max top speed of 23 knots!!
Not only that, but I also claim to have been able to salvage and repair carbs that have, very obviously, been pulled up off the wreck of the Titanic...

I can't remember how many carbs the Titanic had, but I sure hope they run out of carbs to raise off that wreck pretty soon...I'm running out of good Scotch to get me through the patience required for this work.

LARS for sure OR if you don't have an OEM Quadrajet, I would look carefully at the Holley 4175 Qjet replacement 650 CFM vacuum secondary spreadbore I have been using on my 78 L-82 4 speed since 1985, easily rebuilt by me once in 40 years.......super reliable, same gas mileage as the qjet, easy to tune with replaceable primary screw in jets and vaccuum secondary spring replacements, but more work if you need to tune secondaries with metering plates...............
I was able to just bolt the 4175 on my 2014 OEM rebuilt L-82 355 with Howards roller cam, higher compression 10.2:1, and AFR heads with 1 3/4 LTH headers with C4 borlas type S mufflers with little more that a primary change to 72 main jets..........runs very scary strong
