I would maybe ask the guys at Roger’s Corvette’s, or the other Corvette shop near him (forget the name) who they would recommend. I know there’s a shop down the street from Roger’s, but have read too many bad reviews on them, Also, it all depends on what you want to have done and how original you want it done. A good mechanic known for working on hot rod’s and muscle cars may do the trick for you if keeping things all original is not a concern.
The big thing is where in central Florida that covers Tampa to Melbourne or Daytona up to Ocala down to Vero Beach.thats alot of area.
I really have nobody that comes to mind. We have the Vette DR in Melbourne but personally the guy I talked to there years. Ago didn't ride to the level of just being a clown..

C & S Corvettes is in Sarasota. I've known Steve and Lyle at C & S for over 25 years. Being in NJ I've never used them for service, but they're both good guys and have a good reputation. They also have a weekly YouTube channel covering service and other various Corvette topics.

Roger retired in April, sold off all the parts he'd been collecting for years and closed the business.
