How high should oil temp get?

How high should oil temp get?
My water temp normally runs in the 190-200 degree range. The oil temp will inch up until it seems to level off at around 225. How hot should the oil get?

225F is perfect. You should be worried if it inches up towards 300F (which it will during hard driving without oil cooler). If you like to take the car to the track you should consider a synthetic oil as it lives better at high temps.
