In the last two days my oil pressure has increased for some reason. Usually it's bouncing between 40 and 60 but now it's reaching almost 80 when driving! I don't know if my gauge is just whacked or what. What could be causing a sudden oil pressure increase?

Either the gauge or the sending unit. The sending unit tends to fail more often than the gauge. Just screw a mechanical pressure gauge into the oil galley pressure hole and compare the reading against the gauge reading to see if it isn't off. If it is, replace the sending unit first.
Thanks I'll try that. The sending unit is only like $35 so that isn't too bad. By the way that pic is the twin of my car. I just put on chrome side louvers, they really accent the car well. Thanks again
