This is kinda one of the last things I want to do but figured I'd ask now. I will be in the market for some new seats and want to know who sells a bolt in replacement seat in leather or even a custom format of any material for my 72.

Maybe not quite as "custom" as you want but I believe 1980 Corvette seats are a direct bolt in for the early C-3's/
yep 80-82 seats will fit (im not 100% sure on the year, but any seats with a fiberglass shell will work).
I did this in my 71 and they look great!
couple of pointers:
You will have to go to a junk/corvette yard to get the fiberglass shells.
If you have a large girth (like my self 44+) and you want to get the ecklers pre-fitted foam pads (witch look great) do not get the 4' bolsters. your kidneys will thank me.
You will use your 71' seat rails.
When installing the rails to the shells add 1/2" spacers to the front bolts to get the rails to fit properley. Buy longer bolts to accomodate the 1/2" spacers.
Tweak the release arm for sliding so it will not scrape the shells. It will still be tight, but frankley my seats stay in the Full back position all the time so thats not a big deal for me.
When you install the rails the seat pads will have to be out to gain acess to the bolt heads.
I would rather get dragged behind a truck on a dirt road for 3 miles before I have to install the seat pads. Its a ROYAL PITA. suggestion: take to to someone and pay whatever they ask for with a smile.
spray and lube the seat hinges. there is a safty lock that gets dried out after 30 years.
Due to my girth and large thighs. WHen the seats were raised 1/2" the 13" sterring wheel was in my way getting in and out. My only soultion was to install a Tilt/tele.

If you want different "bolt-in" seats then the 79-82 seats are pretty close. They are taller, so that can be an issue. C4 seats also work if you use your slides.
Some have put C5 seats in. I think that is more work.
Al Knoch will make new covers for your stock seats in any color or pattern you need with an appropriate deposit. If your stock seats just need custom recovering then that may work.
