There should be two switches on the headlight mechanism that turn the light off when the headlights reach the full up position. My car had both switches cut off when I got it. The previous owner somehow thought that cutting the switches out would turn the dash light out. MAROOON!!! The switches are in parallel and normally closed. It takes both switches open to turn the dash light off.
Edit: The reason I say maroon is because so many things that the previous owner had done to the car were unthinkable to me. So many little fixes that were jerry rigged. Wood screws everywhere.
I just replaced these 2 switches and now the red light
comes on as soon as I turn the headlights on and stays on
until I turn the Headlights off. I did notice that they mount in a
slotted holes, maybe they just need and adjustment ?

I think you are on the right track. The red light comes on and stays on until both lights reach full up. Sure does make it easier to drive without that redlight staring you in the face.
Definitely an adjustment. To confirm this, turn the lights on and (with a helper in the car) close both switches and see if it goes off. If the dash light goes off that eliminates the rest of the system as a problem and only the switches need adjusting.
The only purpose of the dash light is to warn you if one bucket doesn't go all the way up, like you wouldn't notice the lights pointing at the ground!
