I might be able to help a little bit. I was stationed in Fairbanks (USAF) from 1997 to 2000. I'm not a hunter or fisherman either. You are lucky going to Anchorage. It's warmer in the winter and Valdez and Seward are closer. Take the glacier cruise and whale watching cruise. One leaves out of Valdez and I think the whale one leaves out of Seward. The summer months offer close to 24 hours of daylight. The "driving a Vette" season is short, shorter in Fairbanks. The train ride up to Denali is a lot of fun as well. The ice sculpting festival in Fairbanks is in March and definitely a must see. I had my 89 convertible with me and enjoyed the times I could drive it. Get a place with a garage if you can. I was in base housing and had a heated garage so that made it nice. Enjoy your tour. There is a Corvette club in Anchorage and Fairbanks.

Oh, forgot to mention recreational activities. They are so numerous here that we tend to take the opportunities for granted.
Mountain biking, hiking, skiing (both cross country and down hill), kayaking, ice skating, snowshoeing, etc. etc. If you are into the outdoors at all, you will love Alaska. There is always something to do, you just have to be motivated to do it!
