The issue of tires being 'offset' comes up all the time. In most cases, that's the way the car was built on the assembly line. Some are offset to the left, some to the right. I wouldn't worry about it as the time and trouble to fix it will probably not be worthwhile.
Regarding your doors gaps changing, this could be a sign of bigger problems. If you car is 'local' to the rust belt, you could have a weak frame from years of exposure to winter moisutre and possibly salt.
Have your frame completely inspected by a competent Corvette shop.
As others have said, your bumpers have simply reached the end of their life, nothing you can do about it.
Mike, are you saying it very well could be normal for the wheel to line up with the fendor on the passenger side but be 1 1/2 to 2 inches inside the fendor on the drivers side?
