Compared to stock 9.5" z51 wheels for your year, those wheels will stick out 1/2" more in front, and 9/10" more in rear. They rears should fit just the same as a 11" ZR1 wheel in back, and that's been done. They might have too much backspacing though, especially if you're lowered.
Keep in mind the Z51 wheels already stick out 1/4" more than the 8.5" base model ones.
Yes, both rim width and offset affect fitment.
What you REALLY want to know is "frontspacing" It's the distance from the mounting surface to the front face of the wheel.
Most wheel places tell you backspacing... which is the opposite. Backspacing only matters so that in that you can't exceed it or you rub.

The front tires will be 11mm closer to the fender edge. The rear tires will be 27mm closer to the fender edge. I'm assuming the stock wheel offset for a 87 Vette is 38mm and you have a 255mm wide tire.
To answer your question "Dosent the rim wide change the offset you need?" The wheel width has some effect on what offset is needed but the width of the tire is what really dictates the wheel width and offset needed to keep the tire from going past the fender edge on a car.
