My coolant gauge in my 85 never says anything but low temp. Im pretty sure its just my sender or somthing. Anyways my oil temp is working and I dont know what the norm and high temps are for oil. Does anyone know em?
When my 87 starts out from dead cold, both oil and temp guages say "LOW" but I'm pretty sure (memory almost gone) that the water temp changes to 100 degrees (when it reaches that temperature of course) and the oil temp doesn't switch on till 150 degrees. Oil normally runs around 220 I think.
Just guesing at the oil readings....I aways leave the oil on "Pressure" and make sure it always reads about 3 X my RPM (1.5K RPM = 45 oil PSI).
The hottest my temp has gotten is 222. I usually check my pressure too and that is almost always 80. What temp is considered high or overheating for oil?

Depends on whether you're using conventional or synthetic oil. Synthetic can operate at a higher temperature w/o breaking down. I would say under 250 degrees for conventional and under 300 degrees for synthetic are acceptable values.

Oil temp should start registering at 150 degrees.
The sender may be bad or not attached.
I may be wrong, but I think the sender is a single blade connector between the 8 & 6 plug.
