Default Engine coolant help

I just drained the radiator in my 95 auto today and flushed it out with water, and put in my new 160 hypertech thermostat. After all was done so far we put in 3 1/2 quarts of peak antifreeze. Not water yet, when I went to go drive it the temp gauge not digital went all the way to 260 plus, but the digital reading was 225 degrees Im very confused Right now, if any of you can help it would be greatly appreciated Thanks Tony

When I was putting the antifreeze in I didnt open the bleed screw could this be causing the overheating issue? What do I have to do to fix this problem? Would I have to redrain the radiator again and reflush it ?
