As of late my transmission is been act up again. I just got the phone call from aamco customer care. The pivot joint, starter, oil, and labor are not and were never under warranty. The list of parts is what aamco bought and over charged me. I only gave them the pressure plate, clutch, and flywheel. But, because I bought those three parts I have no warranty. Should I seek legal help?

Your post isn't clear.
They installed the clutch you provided to them?
They provided and installed Pivot joint, starter and oil?

You can always see a lawyer but first you should voice your intentions to the shop. Give them the opportunity to make it right. Beyond that, you should find a new shop cause didn't they phuk you up before?
I have no idea what you said. Which parts did Aamco supply, which did you supply, and what did Aamco install? When did you have the work done and what is Aamco's warranty?
I'm sorry, but I just can't get my head around letting Aamco do anything to one of my Vettes! WTF! It is soooo easy to DIY!
BTW, what year is your Vette? Reason I ask is b/c there is a shim plate that MUST be in place and true (not wrinkled or creased, etc, etc.) on LT1/4 cars with the ZF trans (for sure). If it is messed up, then you're going to have "issues" down the road. (See ZFdoc.com) I don't know 'bout the L98/L83 cars; whether they too have that shim between the block and the bell housing.
Just something I thought of when you said you're having trouble. (What exactly IS the trouble you're having with the clutch??)

Aamco had my OD for about 7 wks. and kept saying they were working on it. When I went to check on it physically I found it sitting right where I had left it. I thought I'd smack that manager right in the mouth for lying to me for so long. I picked it up and left and would never go back. (It was there in the first place because they supposedly had a mechanic who could repair it.)
If you can prove negligence/incompetence on their part by an independent expert, aka transmission specialist with Corvette/ZF experience, a lawsuit will probably not go anywhere.
So the one thing never answered in other thread, and important in your post here...When Aamco did the work, did the transmission operate properly for a time and just now started acting up? Or has it had this problem upon driving away from Aamco?
Another fact to consider...if your ZF is the original, it is the "black tag". This is good because it is tougher than the later "blue tag". It is bad because the gear teeth in the tranny are a sharper cut and the black tags are especially prone to gear chatter when mated to a SMF. Between this, and the fact that you are dealing with a new clutch and flywheel as opposed the old worn out set up, perhaps there is a little "getting used to" period going on here. I'm not saying there isn't a problem, just throwing that out there. Of course it is really impossible to know the severity of your symptoms w/o being there.
