I have a 91' coupe with the same problem. Put new sensor in just off cold mark also. Its a guage cluster issue. I bypassed the the cluster altogether and put in a guage pod with a oil temp guage from glow shift. Works without a hitch. Its not hard to get too. But I wrench for a living. Just my 2 cents.
Just got my 1991 out of the shop , got charged $84 dollars for a oil temp sensor. Did I get hosed ? Mac

If you payed to have it fixed and it's not fixed, then you got hosed...Sometimes it's the wires or the dash cluster and not the temp sensor, so just putting in a sensor doesn't always work........WW

You could have thrown parts at it just as easily as the shop did. When a car comes in with no oil pressure you use a manual gauge then ck the sender...and so on. They skipped a couple of steps.
