Problem is likely youtube picture, it shows him pointing to the double weld point where a jack STAND would go.
As others have mentioned, I place the jack under the mirror on the pinch rail. Jack it all the way up and place jackstands at the jacking points front and rear, move to the other side and do the same. This only takes a couple of minutes and gets the car high enough to remove a tranny. I do this every week after coming back from the weekly drags. My car lives on jackstands and I would guess since 84 it has been up and down well over 1000 times. I have done the same thing when I had a C5Z, C6Z and now with my C7Z. No broken windshields, fiberglass or chassis yet.

Pic of my old 87. I also jacked it up under the mirror. I read about this in a book written by Richard Prince. He would take his 88 to the track and lower it onto a chunk of log that he stood on end. I started using a hockey puck on the floor jack soon after I took this pic. I also switched to a Jack A Vette for the rear later on.
Heh, poor question on my part. What I meant was, using a floor jack, the FIRST jack up, when the stands are inserted. How high is too high?
I've heard plenty of times jack one side, then the other, then go higher as needed in bits.
You can go pretty much as high as you want provided you understand that the floor jack MUST be able to roll freely as the transverse axis of the car moves from the horizontal plane toward a vertical plane. If it can't roll freely then the car can slip off the jack and ruin your day or kill you depending on where your positioned.
