I got a set of grand sport 5 spoke aftermarket wheels, the rears are 17x11 50 mm offset. My question is, will 315/35zr17 tires fit these wheels on a 89 Vette with no problems?

It's mentioned from time to time that people have issues with muffler/tire rub. Theoretically "on paper" it's supposed to be a fit! **** happens though!
I have wheels and tires of the size you ask about at all four corners of my 96 and they fit just fine. I do have a custom exhaust, but it runs in the same pathway as the original and is actually bigger diameter, so I would think if it clears mine it will clear yours.
GY 315's fit, it is close and stick out a little but fit. If you do not want it sticking out check the tread with of the tires you are looking at. With flares, tires are covered.

Not really sticking out, and no rubbing at any part of suspension travel. This is with roughly -2.0* camber in back so the top of the tire is maybe 0.75" further in than on a car with zero rear camber (but you should have a little rear camber in there!).

If the offsets are 56mm for the fronts and 50mm for the rears, you should be OK.
I have a set of real GS wheels (2 in 17x9.5 56mm offset, 2 17x11 50mm offset) with 275/40 tires in front and 315/35 tires in the rear on my '93. The rears don't rub but because it's an autocross car, I have more negative camber in the rear and stiffer springs and shocks. The car is also lowered.
I would check to make sure that nothing will rub on the inside around the brake lines and parking brake cables. I had to build one bracket to pull the left side parking brake cable about an inch further inward.
