oil pressure: weird behavior

Mike, I feel you on that. The SBC is notorious for oil consumption on a good day, as we all know. Thanks for sharing your experience.
In my case, packed on top of that, is the fact that I've got an aftermarket forged piston setup in there, so its par for the course. Hopefully, as you say, oil consumption will decrease over time. Still in the break-in period though, only at 2,400 miles, when I hit 4,000 miles I'll look for some decreases. I can fully accept that over time & on average, 1 qt oil consumed per 1,000 miles as being normal and will be happy with that. GM would agree
