After installing a partially rebuild engine, I'm getting an oil pressure at 1000 rpms around 70 psi. It doesn't fluctuate at all when pressing on the gas. I did replace one of the sensors at the oil sender so I don't know if that has anything to do with it. Does the pressure settle after the engine is broken in? What are the steps to check to resolve this problem?

Best thing you can do is to put a mechanical gage on the car. Forget the electric junk, they are NEVER right and seldom have a good response time to see REAL changes that are happening.
Get a mechanical on there and see what is happening and then go from there. For 80 dollars you should be able to get a good one and with confidence know what is going on.
I would limit the amount of driving you do until you have this resolved. Are you experiencing high oil temps? What else did you do to the motor? Restrictors? What were the main bearing clearances/rod clearances?

I agree! I installed an AutoMeter oil pressure gauge in the car's breadbox and the digital oil pressure gauge isn't even close to the AutoMeter readings.
