Default Iac

I replaced my IAC, now my car idles around 850 rpm.
I did procedure to reset the IAC, start the car andd turn off after 5 secs and then wait 10 and start the car again and it did not reset to normal.

Did I mess up something or not do it right?

It is a a4.

Forgot to mention, in the 1st step, I did slightly press the gas.

Drove it 25 miles to work, still idles high.

Does it matter if the engine is cold or hot when trying to reset the IAC?

Thanks!!

Did you use the correct gasket with the new IAC? A little extra air could explain a few extra rpms.

RACE ON!!!

It doesn't sound like you reset the minimum air setting.
Turn on ignition
Wait 10 seconds and disconnect IAC connector
Start engine
Adjust Idle screw to minimum idle speed (550rpm)
Turn off engine
Reconnect IAC
Start engine.

Or you have a vacuum leak, Or like CFI-EFI has mentioned. If the gasket on the IAC is to thick, it will get extra air by not closing the valve properly. That is just like a vacuum leak. The two walk hand in hand...
