Well, your absolutely 100% wrong there, but thats just because your not a tuner - but I get your general point that Alvin has baselines that he works off of, because he's hands-on done so many vehicles.
But I think you'd be surprised how such a small "minor part" difference makes to a VE table. Heck, we've swapped injector sizes, and thought "just change the injector constant / BPW" but it actually caused the whole fuel map to have to be alltered, and it wasnt a linear change at all either! Depending on how radical the combination is, baselines might only get you far enough to get it running to datalog whats broken.. But then again, if 90% of the people are just doing cam/heads/exhaust swaps, and using all other common components (injectors, intake, whatever) I guess it's not that hard. Alvin does seem commited to making it work right, so thumbs up to him.

Sorry Joe, but that is not my experience.
Alvin did a mail order tune for me, and I dynoed at 356 hp. Now this was after I had a so called tuner really screw me over which is another story. Anyways, the power it made with his tune was not near as impressive as how well it idled etc.
Well by listening to others say how mail order tunes leave a lot on the table, I still wanted Alvin to dyno tune it for me. Met up with him in PA. He ran 14 pulls with the car and still only got it up to 362 hp. Now to me, 6 hp qualifys as a natts butt difference.
The car passes emissions inspections and his TOTAL bill was less then $300.00 which included the dyno time.
I have said it many times and I will say it again, Alvins tune is the best money spent hands down. Sure you can pay more for a tune, heck tunes around here seem to run $1,000.00 to $1,500.00 range for a dyno tune. But I cant imagine how you could give any better service.
In addition to this, I have ask Alvin many numerous questions such as advise on superchargers, nitrous kits, etc. and he always gets back quickly and with good advise.
I know I have no plans to ever use anyone else.
