My brake pedal goes pretty low but the car stops fine. Brakes are newer and the MC and fuid seems to be in good shape. Had them looked at by local mech and he didn't find any problems.
I'm thinking of replacing the original rubber hoses with braided metalic ones. Has anyone done that? Is it a PIA or is it a pretty simple task?
Any rec's on which ones to buy? I've seen all kinds on the net at all different prices.

Earl's and Goodridge both have a good rep. I have Earl's on my car. They're easier to do than bleeding the brakes. Get some metric flare nut wrenches to undo them from the hard lines on the car, if you use a crescent wrench you will probably strip the fittings.
The SS lines aren't necessarily an upgrade though. Read here:
Simple install, not really an upgrade or performance; just usually for looks is all. You'll have to bleed the brake system when completed, get some rubber plugs to stop up the lines so all your brake fluid doesn't run out...
