Ok some test results. I took another connector and some cheap wire and attempted to ground the sensor/switch on the right side (passenger side). I got in and put the key to run. The temp gauge went to 299 so to verify I put it on volts and it read 11.3 and then the gauge auto reverted to the temp at 299 again.

Finally some progress.
I can't imagine what you verified when you switched over to volts, other than your battery needs to be charged. When the wire you grounded, is disconnected, the temp readout says, "Low", right? If so your gauge and wiring both seem to be good. I think if you install the temp sending unit that you installed in the left head, into the right head, where is belongs, you will have solved your gauge problem.
Next, reinstall the fan switch you removed from the left head and we'll see if we can get your fans working properly. Trace the green/white wire that connects to the fan switch (left head) and see if it runs back to the aux fan relay.
