Brake fluid leak
I noticed after a few miles, the rear passenger caliper has a leak at the banjo bolt. These calipers were freshly powdercoated and have new SS lines. I'm assuming its the copper washers and not the bolt. I've tried tightening the bolt and still no luck. I plan on replacing the washers but can I just bleed that single line or do I have to bleed the whole system again?

If there is any coating on the caliper's sealing surface (where the banjo goes), you may not get a good seal. Check this first.
Yes, you can bleed only one caliper.

copper washers
you can anneal the copper washers by suspending them from stainless steel wire, heat them up till they glow red, and let them cool. they will relax, and be soft again and seal right up
