I agree, disconne cting the bellhousing and leaving the the bellhousing and trans connected will give you significantly more room to work with. If this the first time you have done this kind of job I would also suggest that you take pictures as you go of any wire connections or use masking tape and a Sharpie to label everything. Will make things much easier going back together.
No you do not have to pull the hub and unless you just like extra work you can do it exactly how you are now with leaving the trany in place and pulling the motor with the bell housing. I have done it this way several times with no problems.

I pulled my engine in my 89 coupe a few years back (I pulled the 6speed and bell housing) I did not need to pull off the crank pulley I also pulled the distributor the let the motor tip back slightly it makes getting the top bell housing bolts easier to remove!
The engine comes almost straigt up without removing the hood!
