I noticed that the last few times I've gone out that my 88 water temp keeps going back and forth btwn 200 and 230. It's the first time I've seen this and, being relatively new to vettes, is this normal temp variance?

The stock 180 stat on my new 388 began doing exactly that a several days ago. I thought it was unusual, but since the temps didn't exceed 140F I didn't panic.
Then, after a couple of days of cycling that way, THAT SUCKA FAILED IN THE CLOSED POSITION!!!!!!!!!!!!!
Fortunately I wasn't too far from home, but by the time I arrived there, coolant temp hit 260F.
A new 180F FAILSAFE stat from AutoZone solved the stat problem and all's well with the engine. Even in the 98+F temps here in TX coolant temp doesn't cross 218 now.
According to info on the box of the new stat, GM changed the mounting location of the stat in the 90s to prevent excessive cycling. My 96 ain't one of 'em though.
Those are normal operating temperatures. Also check the front of the radiator through the air intake. These cars have a habit of sucking in road debris which blocks or impedes the air flow through the radiator
