newbie needs help
a) check if auto trans on a 95 LT1 is downshifting correctly
b) check if a head gasket is blown
c) check if the engine temp gauge (not coolant temp sender) is working correctly

However, your questions are somewhat generic, not Corvette specific.
a) Automatic down shifts are somewhat intuitive. Is your trans giving you cause for concern? Other than a subjective test drive, the FSM likely has line pressures listed for different conditions that you can verify. Your transmission is computer controlled.
b) Oil in the water. Water in the oil. Water leaking at the head to block junction. A compression test and a CO in the coolant test, come to mind.
c) Disconnect the wire to the gauge from the sender, then ground the wire that goes to the sender. Open circuit, the gauge should read the minimum, low, or cold. Shorted, to ground the gauge should read full scale.

2. Check for water in the oil, do an oil change, give you a good opportunity to check and perform maintenance that needs to be done anyways. Also check for oil in the coolant.
And to reiterate what everyone else has said, get a factory service manual from helms. They are a bit pricey but really the best reference to have.
