I have a "87" parts car with a complete engine and transmission, with about 83000 miles on it. My question is can I swap the engine and transmission out of my "89" without too much trouble. My "89" has about 134000 miles on it, and the "87" Sounds so much better.
you have a parts car AND a place to put it AND a place to work on them both? I'm jealous!!!
you can swap it, no problems, but you will have to use your 89 intake setup because the 87 has a start injector, and the vacuum take offs are car specific. The throttle bodies are different, but you might find the 87 adaptable.
In order to use the 87 as it sits, you just can leave the start injector on the manifold with no connector on it plugging the hole in the manifold and use your 89 throttle body. The manifold ports that meet the 89 may match up.
You probably won't feel any difference in power due to the one that is worn out originally had about 10 HP more than the 87 did new, and now they are probably equal in output.

Should I use the ECM from the "87", or will the one in the "89" work fine ?
Put '87 engine in '89.
Use all '89 wiring /sensors / ECM.
If you don't want to pull the intake ,just leave cold start injector in place to plug hole ( you won't have a wiring plug to connect to it anyway) and use '89 TB because the cable linkage is different.
Use knock sensor from '89 block.
The ECM won't know the difference.
