I own an 87 vette and find that when I get up to around 70 mph and over it starts to wander around a bit and the steering feels loose especially over humps and bumps in the road. Is this quite normal or do you think there could be another problem, such as worn bushes, shock absorbers...
also the front spoiler is fairly broken with chunks zip tied back on by the previous owner, would this have an effect on the steering at speed?
The spoiler wont do anything to effect the handling. It's there for engine cooling mostly. Depending on the mileage shocks, bushings, tie rods, etc. are getting worn. It could be time to get the front end rebuilt.

Sounds exactly what mine was doing and it got so bad that my steering wheel started shaking at speeds over 55. I'm in the process of replacing all four ball joints, both tie rods, and all the bushings in the front.
Check your alignment. Could be causing it. Also, check tie rod ends, ball joints, and wheel bearings. All pretty easy to check, and could contribute to the problem you have. The spoiler shouldnt be doing anything substantial to tracking.
