Do we really need these pellets? After changing my waterpump, I flushed the system and went back with a 60 (distilled water)/40 (antifreeze) mixture. What does the pellets do?
That's what I am trying to figure out. The service manual calls for them, and I just wanted to see what all the boys are doing. I believe they are to take care of any small leaks before they become big ones. I do not believe they have any lubricting purposes at all.

I think they are purely to help stop small leaks. I have asked two Vette mechanics, one who I frequently race with, and both have told me to use the tablets or else small leaks might occur.

They are for sealing any small leaks. They are almost edible! Ingredients are something like tumeric, ground walnut shells, soda! They are reminiscent of the old mechanics trick of putting ground pepper in radiators to stop leaks.

I thought it also had something to do with protecting the aluminum, being a porous metal, the pellets help to seal the surface and keep the dexcool from eroding it.

Vince is correct. My mother in law has a Caddy with a what is known as a porous casting. The anti-freeze actually weeps through the side of the block near the head. It the the weirdest thing I have ever seen. I use the pellets in it but it leaks anyway. It probably leaks maybe 6oz/month or less, almost nothing. I am sure the pellets also are supposed to help seal head gaskets, radiators etc. The factory service manual for the caddy addresses the porous casting.
