IMO, you don't. If you want to see it spray, take it off and have someone crank the car. That gives you a rough idea. Other than that, I think it is best of you took them off and sent them to FIC and have John look at it for you. The have ways to see the spray pattern and, more importantly, check the flow rates. I would not recommend that you deal with pressurized fuel. I have done what I suggested for diesel and if you want to do gas, make sure it is in a very ventilated area.
If you do that, remember that smoking WILL BE bad for your health.

That is definitely a good start. But that does not insure the valve is working or spraying correctly. A lower resistance say 8 or 10 ohms is a give away the injector coil has a problem and probably not working correctly.
For a car that old, it is very likely to have varnish in it. There are all kinds of things and the ohm test is only good to ensure that one part is working properly. R&R with a test bench is the best way to know if it is spraying well or not.

to ohm the injectors first and see if any coils are bad, before pulling them, which is a way bigger job.
If ohm reading is in spec, and fuel pressure is good, how does it run? If it idles well and revs smoothly to WOT, chances are you are good.
You cannot detect changes in the injector flow. Those happen over time. So even if you ohm it and it does all you say, you will not really know if the spray pattern is good or the volume sprayed is constant.
