My coolant temperature usually sits somewhere arround 190-195. Sometimes either driving or sitting in traffic it will creep up to as high as 207 (once) and then all of a sudden drop back down to the normal operating temp. It happens within 5 seconds. I don't believe that the temperature of the coolant can change so fast in reality. This cycle happens every 5-10 minute of running. It happens hot or cold weather ... this AM it was ~25 degrees here in Gainesville.

I do have a hypertech thermomaster PROM and I don't know what kind of thermostat it has.

The "proper" operating temp should be around 220 F.Does this temp drop happen when cooling fans come on?If so I wouldn't worry about it as it could be the thermostat opening or fans coming on or a combination of both.Wouldn't be a bad idea to just replace coolant temp sensor as its cheap & who knows how old it is.Only buy A/C Delco on this other wise you MAY have "issues".207 degrees F is not a high temp so don't worry about that. What is normal operating temp of engine in summer?Do you have the underbody X-brace on your convertible?

Same thing in the summer 190-195. I'll check on the fan. Yes I have the cross brace. It is stiffer with that but once when I jacked up the Left front wheel ... the drivers door wouldn't latch until I let it down from the jack.

Anytime I've seen that happen on a car, it's been a sticking thermostat. They're cheap enough where it's worth replacing.

I think the car has a 160 degree t-stat ... it's a Florida car ... I'll replace it.

Sounds like it is working properly. If it does it consistantly at those temps it is the therm opening and letting cool water into the engine. Start the car cold and monitor the temp and radiator temp. When the temp starts to fall you will feel the radiator heat up. If so all is OK.
