does anyone know where I can purchase the oil cooler hoses for an 89 coupe. I've tried many places to no avail. I have been told they don't make them anymore

That's true, I just removed my cooler for same reason and fact that I switched to synthetic oil
Try Autozone, bring the hoses with you. They have a pretty good inventory of formed hoses and you might find some you can make workt, just try to make regular hoses fit.
I have had no adveerse effects from removing cooler. My oil temps were always lower than I liked

One is a straight piece of heater hose to hook up to the hard line; the other has a 90 degree bend to the block fitting.
If you put a 90 degree fitting in the block facing rearwards you can use a short section of hose to connect to the cooler.
Or go to a auto parts shop and look at their generic 5/8" heater hoses; many have suitable bends that you can just cut to fit

That what I did, took my hoses and choose a hose that matched, cut it to fit, easy.
I believe you can still get those 2 smaller hoses through Ecklers or Corvette Central, etc.
Though, what is that fan used for in front of the radiator? It looks like it is part of the oil cooler package. I've never seen that fan turn on.
Auxiliary fan should come on at approximately 235 degrees if fan, sensor & relay is working properly. Mine has only come on a couple of times in the dead of summer climbing hard up steep winding mountains roads. FWIW.

Aux fan if fitted runs @238F. Under normal driving most never have it come on. If you get a replacement fan switch from Ecklers , et al , you can have it come on earlier
