I'll debate the very easy part but it's not an unreasonable job. Plugs took me about 2 hours on my '86 convertible. I torqued by feel; no way to get a torque wrench in there. Fuel filter took me about 3 hours but you have to remove the X-brace for access on the convertible.
Having proper tools is important. I found a wobble adapter helpful for the plugs. Flare line wrenches are recommended for the fuel filter to avoid rounding off tube nuts.
I used a Wix fuel filter and the specified AC plugs (note that the plugs are different for cast iron and aluminum heads). Also, use anti-sieze on the plug threads if you have aluminum heads.
