So i got my exhaust installed and just for labor it was 1000$ and it was quoted at 500$ for hedders and an h pipe just had to vent a little bit, but any ways sometimes in my car when i get on the throttle my car will completely cut out it wont even bog. It will go to around 2000rpm and just cut out, everything else works fine does anyone know what it could be.

If this has happened immediately after the exhaust install, I would think the first people to ask are the shop owners that gouged your wallet.
If this has happened well after the exhaust was installed (and drove normally immediately after the install) you need to be more specific.
Have you done the basics?
Fuel pressure check?
Timing check?
Checked vacuum with a vacuum guage?
Do a visual inspection to see if any sensor is unplugged? i.e maf sensor, cts etc
Check engine light?
If so scan for codes? If yes, what codes?

First I want you to go buy a fuel pressure gauge and hook it up at the rail, and watch the pressure readings on startup, while youre grabbing the throttle lever through the RPM range and then after shutting the car off. That will help us diagnose the problem (s).
And DO IT without taking the car to someone and telling them its the fuel pump so you dont get raped again.

with all the above points. damn that shop saw a kid in a vette and brought out the lube!
