Hm, sounds like something with your Idle Air Control. If I understand correcty, your engine stalls as you let your foot of the gas.
As for the Check Engine Lamp. Does it ever come on (should on startup) or never at all. This would indicate a burnt out/ non existent lamp in the panel.
If you can´t read the codes by the SES lamp, try to find a shop or friend with a code reader.
Otherwise you will have to replace the SES bulb first to know whats going on.

You will need to get the codes.
There are lots of reasons it could be having problems.
You will need a factory service manual for your year or a real good mechanic that doesn't charge an arm and a leg per hour.
Example - an engine swap in my 92 took the mechanic 46 hours, he charged me for 23 of them at a real good rate. I use him when I don't want to do it myself.
Before changing it get the engine warm then remove the electrical connector from the IAC. If the engine dies adjust the base idle to 500 rpm then reconnect the IAC.
You do not have to pull over & stop to restart the engine just put the gear selector in neutral while rolling & restart.
