I've got a code that says I'm running rich, I figure it's the O2's, makes sense because my mileage is down. I've read that there's only one, and also that there's two.
Can anyone confirm if it's one or two?

One on a '91. They added the second sensor when the LT1 came out.
Only one, drivers side below where the manifold connects to the Front Y pipe. You'll see it.
They sometimes dont want to come out, so there is a specific tool made to get them out easier. It also helps to lube them with WD40 significantly, or to try it with the pipes very hot.

I remember back when I put longtubes on my LT1 I couldn't get the O2's out. Had to clamp the exhaust in a vice and use a breaker bar. I doubt this will be any easier having to be under the car. But, at least it's only one.

Just run the car a few minutes before you even try.
Also, forget about WD 40. It was never designed to be a penetrating oil/lubricant. To free things up use a penetrating oil such as Aero Kroil. It was designed to free stuck parts and comes highly recommended by members of the Model T Club, who know rusted, stuck parts very well.
