Priya, anything to report back; what did you end up doing?
I'm now mulling over many of these same ideas with my own 79 L82.
I thought I was going to go with an off-the-shelf modern TBI EFI system like the about-to-be-released Holley Sniper EFI, BUT port EFI with a modern designed-for-air intake system and the extra fuel economy AND torque is calling my name all of a sudden...

I'm patterning my build after this one. This Vortec/TPI motor produced good power up to about 6000 rpm

I know next to nothing about the LT1. I would consider the LT1 intake but I thought it wasn't compatible with the Vortech or early style SBC heads. What does it take to convert it to one of those?
What is the horsepower rating and at what RPM?
What is the rpm range where it produces best power?
What kind of distributor would it need and would that be compatible with my L82?

*300 HP at 5000 RPM, Rev limiter @5850
*See this graph HERE Starts at about 2000 RPM.
*It uses the "optispark" distributor and not sure what you mean by compatible since your removing the L82 entirely.

This sounds like a pretty cool project! I have always admired the look of the tuned port's runners... Almost spider like!
I'm currently in the middle of a restoration involving a 1975 C3 Stingray that includes a conversion to a fuel injected LT1 (G2) engine. It's a LOT of work and we have already been thru two LT1 parts cars to gather up the parts. Looks like we might even have to pick up a C4 parts mule with the LT1 for all the brackets and such to make it look authentic.
Keep up the good work!

If money were no object, I'd go for this: https://www.firstfuelinjection.com/services.html

I'm guessing that there's no way in @#$#@ this will fit under a mid-rise C3 hood...

There's a place that will convert one for you, but it just doesn't seem worth it especially given Priya's fuel economy goals. The stock TPI or slightly hacked TPI manifold would focus on fuel economy improving low to mid end torque more, right?

depending on your budget you could look at this.

No idea if it could possibly fit under a C3 mid-rise hood, though.

Update: I found the link! http://noel.prodigitalsoftware.com/NCtpi.html
My problem is that "first" is about the worst search term, EVER; these guys should've named it something else to make it searchable...

Maybe in theory, but the LT1 typically gets better gas mileage than a TPI. Doesn't matter; sounds like the OP already bought his intake parts.

Just thought I'd add my 2 cents here. That's a whole lotta mods all at once for any one trying it their first time. My advice is to just install one mod at a time then get the car running stable. Try the intake swap first or maybe just the ECM before really opening the motor up. You may find all your mistakes - and we make mistakes - can stack up against you.
Good luck Pyria and congrats on choosing a unique build. I think it will be peaky but fun to drive.

I by the way can probably help you with any FAST fuel injection questions.
