They put a foam core into it, that may do what you want.
It not, why not just redo the pickup point?
You can see the bottom of the tank once the spare is out.
Leave the gage where it's at.
put a new pickup at the back and bottom.

The only PITA is removing the rear bumper cover,rear exhaust and dropping down the rear tank frame to et the old tank out.
Aside from that,dont see a problem putting a fuel cell back there.
I replaced my tank at home with a new one and didnt find the job that bad.Just the bumper cover bolts were a little hard to reach.
Plenty of room in there to do so,however,ya may need to fabricate or weld a plate to secure it down to the cell is too short and would slip through the frame opening.
If you retain the stock fuel lines,you may need to fabricate or put some kind of straps in there to keep them from banging around.
GM used soft foam cushions between the tank,lines,and inside panels to keep the fuel lines steady in place back there.
