The cooling fans on my '90 don' turn on from the sensor in the head. That one is for the gauge only. THE FANS TURN ON FROM THE SENSOR AT THE FRONT OF THE INTAKE. it is a two wire sensor and I haven't seen any replacement. I have the fans wired for manual operation and have checked most of the causes for overheating except removing the water pump. This car has 8,600 miles. It has been flushed, rad checked for debris, timing checked, burped, etc. Sitting at lights in warm weather the temp will go too high. In cooler weather-no problem. Have a 160 thermostat installed. ??? When I turn the fans on manually (or fan) there is no problem.
The part I linked will work on your car too. I have a 91 and, to my knowledge, the cooling system is the same as yours.

The CTS sensor in the front of the intake is available and is most likely the same as the MAT in the bottom of the plenum. The CTS is responsible for reporting engine temp to the ECM that it makes calculations from, and turns on the fans at 107.75C or about 226F. The sensor in the head is as you say for the gauge in the dash. You can either change the value in the programming, or install the sensor TA has pointed out to have the fans come on at lower temps. Manual switches are not a good idea, because the rely on humans that can forget.
