I would not think that the thermostat would have a large impact on your numbers, nor the fan switch. 
with Kimmer....your getting too much unburned fuel running thru the system. Check plug wires, new plugs and gap correctly. Did you change injectors to a larger than stock size? Really wondering about your new chip.
Do you have an adjustable fuel pressure regulator? If so, did you turn it up to increase the pressure.
You also need to include the YEAR of your car in your post. It makes a difference in being able to help you with your problem.
