Are you sure it's the stat? I had the exact same problem and it turned out to be the radiator cap on the recovery tank was sticking closed. You may also have air in the system. Check to see if you have heat when you think the stat is stuck. If you do, it's not the stat. This is what I did and I haven't had the problem since. I am not sure of the exact required bleed procedure but try this: there is a bleed screw near the hose connection to the thermostat housing. Try opening it a little and see if fluid comes out. Hold it open until some does, then close it. Open up the recovery tank and add fluid until it reachs the spill tube. This is a good time to check the cap to see if it may be sticking. Well, I hope I was some help. If not good luck.

Your cooling system is destroying your thermostat because it was designed to operate at 180, not 160. The radiator is not sized to get rid of heat fast enough to allow the engine to run at 160 and the proof is in your first sentence, " around 190 or so". The pellet in the thermostat is damaged when it is exposed to much higher temperatures than it was designed for. I recommend you install the 180 stat your car was designed for. If you want your engine to run at 160, then install a bigger radiator and a higher flow water pump . My 87 uses a 195 stat and when I installed a Stewart water pump which has higher flow, my engine doesn't go over 200 in 97 degree weather and sitting at a light and I have the original radiator .
