For the volume you're looking for you're probably going to want to swap the mufflers and keep the cat, maybe do headers and some bigger pipe. The cat really takes away most of the volume.

I have some Exotic Muscle Headers for sale that are for the Lt1 and L98. They are 1 3/4 steel but coated inside and out with 2.5 inch extensions NO CATS. These headers were used 1 year and never in the rain or snow. No rust on them either. Would like 600. As for mufflers? Magnaflow or Corsa are probably what you want if your looking for semi quiet at idle but nice sound at WOT.

I did what you are asking for on my 1992 LT1 about 2 years ago.

Stainless Works long tube headers (JetHot coated), cat delete, x-pipe, 2.5" pipes, chambered SW mufflers, polished stainless tips.
I ordered mine with the AIR fittings, but decided to cap them when I deleted the cats (not required for a 'Historic' auto).

More mellow than stock but not loud and no drone.

I want to put longtubes on my car. So in your case, the LT's didn't make it much louder?

Nope.
Very mellow at idle. Awesome when you punch it.

I removed a pair of Borla mufflers that were mated to the factory exhaust and droned terribly.

Exhaust systems are really a personal preference kind of thing. They're all going to give you similar gains, but vastly different sounds. On my car currently I have Hooker long tubes, 2.5 SS exhaust with an X-pipe and Corsa mufflers (no cats). I'm very happy with the system. It sounds great and there is zero resonance.

Previously I had the same system, except with Flowmaster 40 series mufflers. With the Flows the car sounded wicked from the outside, but it would rattle your teeth while driving from the resonance. It was so bad, it got to the point where I didn't even want to drive it.

Here's a couple videos I made. The only change between the two is the mufflers. Flowmasters in the first and Corsa in the second.

Setup looks really nice!!👌.....but i have two questions since your motor is a lt1 and i have an l98 do they sound different in general??...and do you have any ground clearance issues with the long tubes??...because i have read that sometimes headers will be too low

The L98 and LT1 motors both have the same firing order, so the sound should be the same.
No ground clearance issues for me, as you can see in the photos.

You have a sound clip for these? Been thinking about some for my vert. I've removed the resonator but thats all I've done so far. Didn't want the car to be obnoxious.

I have a few clips of them on my cell phone, but they don't capture the sound that well. I'll try with a different camera

When I removed my cats (or hollowed them actually), the car had only minor mods. It made the sound a little deeper and a bit louder. I removed them because at that point in time I was trying to do relatively inexpensive mods and see their improvement at the track. On my car, gutting the main cat was good for about a .1-.15 reduction in 1/4 mile times. The L98 cats are pretty restrictive and there is a definite improvement by removing or replacing with more free flow units. I hear that LT1 cats are much less restrictive and there isn't as much gain to be had.

I never had cats on any of my more free flowing systems so I can't speak for their effect on sound with headers, X-pipes, etc.
