Default Part Throttle Power Issue

So my 92 m6 vette started to have a really weird issue after I replaced a bunch of parts. I pulled off the car a bad ICM, two different sets of plug wires, a MSD Streetfire coil and autolite plugs that were gapped at .060.
I then replaced them with Taylor wires, new Icm, MSD Blaster Coil, and NGK plugs gapped at .050. I also did the throttle body coolant bypass......

Now anytime I'm at part throttle the car seems to be struggling, it even seems that as I let off the throttle it gets a small boost of power. But when I am at WOT it runs like a raped ape. So basically Its struggling to move out, or its roasting tire. UNLESS its above 3k rpm sometimes it kicks in at 3.5k. once its above that RPM it runs great at all throttle positions. It almost feels like it has no timing until that RPM, and as you cross that line it likes to wack your head into the headrest and **** off passengers.

Mods to car:
-Taylor 8mm wires
-Newish opti (doesnt feel like opti failure)
-NGK Plugs
-New ICM
-Coolant bypass
-K&N air filter
-De-restricted airbox
-Hooker Shortie Headers
-High Flow Cats
-Magnaflow resonator w. mufflers dumped
-and other stuff that doesn't affect the way the engine runs lol!

I really have no ideas at this point.... And the issue is pretty damn annoying.
Thanks in advance guys!

That is an option, but why would RPM or going WOT change O2 sensor feedback?
