Not sure what year your car is, but according to my '88 service manual electrical supplement, you should be able to check the resistance of the sensor while heating it to a known temp (might be easier said than done). Here are the resistance vs. temp values:
570 Ohms - <150 deg F
369 Ohms - 160 deg F
135 Ohms - 220 deg F
75 Ohms - 261 deg F
47 Ohms - 300 deg F
Don't know how much that will help you, but maybe you can do some checking.
