Default baby steps

This is a dumb question but I'm going to ask it anyway.

I have plenty of experience building engines (check signature) but all with carbureted engines. I've read some stuff on here and here's what I'm wondering: Can I build up a 383, with let's say a Holley Stealthram, Hooker headers and Y-pipe, roller cam & roller rockers, Dart Pro 1 aluminum heads, and then just use the factory EPROM and fuel injectors to start it up?

I could then iterate based on how lean or rich it is. In other words, would the factory EPROM be close enough so I could start it without risk of damage from being too lean? If so, I'd be comfortable with "tweaking" from there. I'm just kind of scared of starting a new engine with a chip that is not tested.

It would run pretty crappy-but yes it'll start. (Did that with my 406 before the SC) Main thing is to run it easy at first (no wot!) and scan the blms right off-if they max out at 160 (way lean and can't compensate anymore) then you'd need to shut it down and adjust the inj. constant (just ball park it is ok at first) to get it in range before firing it up again. But again on mine- I didn't hit blms of 160 on mine with the stock prom for initial start up. Hmmm, looking at your wanted mods again-I'd start with bigger injecotrs just so you don't have to pull it back apart right away.....
Stock inj. would be fine for initially, but depending on how big of heads/cam you'll probably need bigger inj.
And not a dumb question at all!

You do understand that open loop means there is no input from the engine controls for spark and fuel, right. All you are gonna get in OL, is what the PROM tell it to give.
(This is why you will want to stay out of OL, until you learn the engine a little bit.)
Small changes at first are best. Big changes can get you into trouble.
